Looks good! There are just a few things you need to change/add.

You'll need to set the actions for the map change hydronex and lavaflag to:
rcon chmap hydronexb3
and
rcon chmap lavaflag-20070428

You might want to have a message set up to explain how to spectate. Something like this:
You can see through my eyes by pressing F3, then clicking your left mouse button until it shows that you are spectating shaggy.

You will want to be able to log in as the server admin, so you can change maps, pause the game and other special commands. I have a server menu made for this in the teacher preset. Here is an easy way you can add this menu:
1. load your preset
2. select the my teacher preset and click add
3. delete all of my menus, except the server menu
4. customize the server menu if you want

There are a few typos in the messages, but that isn't a big deal. I'm sure everyone will understand what you are talking about.

I think your Lesson Speed menu preset looks great!

That's up to you. So far, we've been having classes on the weekend, but it could be any day you like really.
